When embarking on the creation of a new espresso blend, distinct from our house "Bookmark Espresso Blend," we aimed to create a blend that diverged in character. While Bookmark seeks to more delicately highlight the nuanced flavors inherent in each origin it represents, Archive pays homage to the enduring flavor profile of traditional espresso.
Historically, espresso was characterized by a darker roast profile than what is commonly served in modern cafes. However, we sought to strike a harmonious balance between the rich, more-developed roast profile AND the expression of origin characteristics. Archive represents the culmination of this quest for a blend that encapsulates both nostalgia and progress.
We believe Archive offers a balanced representation of the evolution of espresso, celebrating and honoring its heritage while embracing its journey forward. As we continue to push boundaries and explore new horizons in coffee, "Archive" stands as a beacon of consistency you can return to, serving as a reminder of the distance we've traveled and the heights we've yet to reach.
Our Preferred Recipe:
18-20g in & 30-35g out in 28-32 seconds
Notes: To fully capture the essence of what this blend is speaking to, we really like pulling Archive at a tighter ratio. While it still tastes great at a 1:2-1:3 ratio, we have noticed that it actually begins to lose some of the rich sweetness of the more concentrated pulls.
