This microlot is the initiative of friends & partner, Los Volcanes. They wanted to have a lot that spoke directly to the showcasing of varietal genetics and terroir. The ripe Yellow Bourbon cherries are naturally processed because that is the prevailing processing method in Brazil, but the cup profile you get when brewing this coffee is less process-forward than what you may expect of a natural. Instead, you get a beautiful representation of the plant varietal, showcasing the inherent sweetness and acidity of Yellow Bourbon. Spearheading the opperation in Brazil for Los Volcanes is Guiherrme Martini. In collaboration with Rio Brilhante, the Yellow Bourbon trees were planted in 2021 and we are thrilled to be representing some of the earliest harvests to make it into the US market.
