As our partnership with Baho Coffee & Sundog Trading enters its third consecutive harvest, we're thrilled to unveil one of their experimental coffee lots from Rwanda. Managed by Emmanuel Rusatira and the dedicated Baho team, this naturally processed gem hails from the Nyaruguru District in the Southern Province of Rwanda.
Located at Baho's Fuji Washing Station, this coffee undergoes a unique processing method spearheaded by Emmanuel and his team. For several years, they've been refining the fermentation stage, employing a method where select cherries are enclosed in drums to foster a low-oxygen environment, allowing for a precise 100-hour fermentation period. Following this meticulous fermentation process, the coffee is carefully transferred to raised beds for sun drying, where moisture levels are attentively monitored to ensure optimal results before completing the coffees processing journey, which is meticulously overseen every step of the way.
